Most fast food buns are baked in under 45 minutes using synthetic dough conditioners and chemical leaveners. At FoodHouse, we rejected the shortcut approach.
1. The 36-Hour Wild Fermentation
True brioche flavor cannot be hurried. Our process starts with a 12-hour poolish pre-ferment made with non-GMO organic flour and mineral water. The dough is slowly cold-retarded over 24 hours at 4°C. This allows enzymes to break down starches into complex sugars, creating deep caramel notes and a rich aroma.
“A burger is only as great as the bun that carries it. If the bread fails, the entire meal fails.”
2. High-Fat Cultured Normandy Butter
We incorporate 28% cultured Normandy butter into each batch. The cold butter is folded into the dough during the final mixing stage, creating microscopic laminated pockets that expand in the oven into an impossibly light, feather-soft crumb.
3. The Toasted Crust Barrier
Before every burger is assembled, our chefs toast the split bun on a buttered flat-top griddle for 30 seconds. This creates an impermeable, crisp golden seal that protects the soft bread from patty juices, ensuring your burger stays structurally sound from the first bite to the last.
